Sensory Analysis

EYES

A "chaotic" and beautiful mix of dark autumn-brown leaves and silver-grey stems. The liquor is a luminous deep amber with exceptional clarity.

NOSE

wildflower honey, with a distinct "aged" scent reminiscent of a sun-drenched wooden barn or dry hay.

MOUTH

Incredibly smooth and thick. It leads with a malty, date-like sweetness and develops into a complex, woody depth. It is entirely devoid of the sharp "green" astringency found in younger teas.

BODY

Round and medicinal. In China, aged Shou Mei is often called "three-year medicine, seven-year treasure" because it feels soothing on the throat and exceptionally grounding for the body.
